E’ particolarmente pregiato per la sua persistenza, i suoi profumi delicati, per i sentori di frutta, pera, ciliegia, marasca, vaniglia, mentre gli aromi di frutta secca e spezie derivano dal processo di “ripasso”, breve fermentazione del vino sulle vinacce dell’Amarone.

In vigna
La famiglia Clementi ha aderito alla Federazione Italiana Vignaioli Indipendenti nel 2017 perché perfettamente in linea con la filosofia della federazione, con i suoi valori ma anche requisiti. La Federazione, infatti, ha lo scopo di unire tutti quei vignaioli che credono e difendono la loro terra e che producono, dall’inizio alla fine e durante tutto il processo produttivo, il vino nella loro cantina. Il vignaiolo, dunque, coltiva e cura la vigna, raccoglie le uve, le vinifica e imbottiglia, vende il proprio vino. Tutto ciò corrisponde alla visione della famiglia Clementi e quanto svolto sin dall’inizio della loro storia.

In cantina
Le uve Valpolicella vengono vinificate in Settembre Ottobre e ripassate sulle vinacce dell’Amarone (le vinacce dell’Amarone non vengono pressate) in Gennaio. Fermenta per circa dieci giorni, poi vengono eseguiti rimontaggi due volte al giorno, e un delastage a metà del processo di fermentazione. Viene quindi travasato quattro volte, senza essere filtrato, messo a riposo in botti di rovere da 30 hl e poi in barriques, sempre di rovere, di secondo passaggio, l’estate successiva.
Affinamento: in botti di rovere francesi, da 30 hl, per almeno due anni.

  • San Maurizio Wine Club is available to organize winery visits for its members with the Guest Producers of the project.

Upon subscription, you will receive email and whatsapp contact to plan your Wine Concierge appointment and your visits.

EVENTS

  • Members of the Club will be informed via email and on their personal website page of any event planned by the San Maurizio Wine Club for its members.

Events may be free or with an access fee and they may allow to be accompanied by a partner.
