Description:

Moscato Bianco vinified with the Classic Method experiments are rare, particularly in the famous area of ​​Canelli, despite this being the grape used in the first classic method sparkling wine experiments in Piedmont, and in Italy, right in Canelli area.
With regards to this style of production, the Moscato Bianco grape was quickly abandoned due to difficulties in obtaining stable bottles, since, due to the high sugar content, the yeasts do not completely exhaust the available sugars.
Erpacrife made the first experiment with this technique. He then decided to deepen this experimentation, with the creation of a wine destined to become a reference point for evaluating the stability and aging potential of this product.
The grapes grow on a vineyard in Madonna di Como (under the Municipality of Alba), at 400 meters above sea level, with calcareous-sandy soil.


Tasting Notes and Pairing:
Open to the nose, aromatic, with floral scents, peach, flowers, honey and notes of mint and ginger.
Suggested serving temperature:
To be served at 8-10°C
in the vineyard:
Production method and aging:
Cryomaceration, then soft pressing, cold storage and refermentation at low temperature with cryophilic yeasts. Maturation in bottle on the lees for at least 24 months, for a total refinement in the bottle of at least 48 months before release.
