Description:

The AOC of the Loire Valley “Coulée de Serrant”, one of the three AOCs of Savennières, north of the Loire River, is the monopoly of the Domaine Nicolas Joly, from whose vineyards it produces its flagship wine, considered by many to be one of the best white wines of the world.
The terroir is extremely suitable for the cultivation of vines, that recall an history dating back to the 12th century, thanks to the work of Cistercian monks, of which a small monastery is still preserved. Since then, the tradition has continued uninterrupted, through the great events of history and changes of ownership, until 1977 when Nicolas Joly, a banker in New York City, where he had studied at Columbia University, decided to leave his career to come back to the family business and to the vineyards in Savennières.
That choice will influence not only his life, but the world of wine as a whole, since today Joly is recognized as one of the pioneers and the historical reference point of biodynamic viticulture, which the producer has been experimenting since 1981 (and which applies on the entire production since 1984) and which he teaches thanks to conferences and lessons for winemakers all over the world.
The unique personality of the man, the undisputed potential of the terroir and the excellent quality of its “Coulée de Serrant” make it one of only four vineyards in France to have earned an AOC of its own (two others are La Tache and Romanée-Conti). The vines dedicated to this production, which are on average 30 years-old, grow on 3 hectares of land overlooking the Loire River, on soils rich in schist (rock that characterizes some of the most suitable terroirs for viticulture in the world).
A wine designed for long aging, with a unique profile, gifted with an ancient and recent history at the same time, like few others.

Tasting Notes and Pairing:
A wine that requires breathing, and evolving, in the glass, offering different layers of complexity and flavours as time passes in the glass.
Wide and deep, but very clean, the fruit is supported by a mineral and slightly balsamic structure.
To be combined with soft cheeses: goat or blue-cheese.
Suggested serving temperature:
10-12 °C
Suggestion to open it about 1 to 2 hours before serving it. And let it breath in the glass as well.
in the vineyard:
Biodynamic viticulture, organic compost from cows owned by the domaine, natural cover crop, minimal plowing of the soil, natural treatments and respect for biodiversity, manual harvest.
Production method and aging:
native yeasts. Fermentation in second passage barriques, aging for 6-8 months on the fine lees.
