Description:

The historic Pio Cesare winery is among the very few to have the cellar building located in the historic city center of Alba, built on the ancient Roman walls. The long history of the Company, founded in 1881, has allowed the family, still at the head of the winery, to keep the Alba facility, even if today the municipality is not part of the Barolo nor Barbaresco appellation, and to continue producing their wines there.
The family’s possessions extend to various municipalities in the Barolo and Barbaresco denominations and beyond, in the typical style of these areas to buy plots of land on the most prestigious and vocated soils and exposures, in order to ensure the best wines in every vintage.
And this is precisely the philosophy of Pio Cesare, that of “remaining faithful to the style” of their history, with classic and traditional Barolos and Barbarescos, produced thanks to the careful blanding of the producer’s vineyards, selected year by year to deliver the best expression of the Barolo from the different vineyards and terroirs of the area


Tasting Notes and Pairing:
Barolo in its most appreciable classicism, elegant and fine, with a pleasant drink of black fruits, spices, herbs, concentrated but with soft tannins.
To drink with a vegetable soup or with a sliver of dark chocolate.
Suggested serving temperature:
It can be served slightly more chilled, at about 17-18°C or at 19-20°C for a touch of warmth and softness.
Suggestion to open it about 1 to 2 hours before serving it. And let it breath in the glass as well.
in the vineyard:
Minimal intervention in vineyards, green harvest and selection of grapes.
Production method and aging:
Maceration with skins for 25-30 days, then 30 months in French barrels (and a small percentage in barriques).
