Description:

The Promising Grape is an initiative of the Sand & Berg vineyard. Its objective is to create a context and an aesthetic framework in which a synergy takes place between the art of making wine and that of making a work of art. The Promising Grape promotes the work of young artists who still have to establish themselves in the public domain.


Tasting Notes and Pairing:
A meal wine, its versatility allows it to go well with everything. Two tips, tradition: tajarin (Piedmontese tagliolini) with sausage sauce, suggestion: gnocchi with gorgonzola and walnuts.

in the vineyard:
We are keen to treat the vineyard as a natural phenomenon and to leave it to its own devices as much as possible. We have therefore opted for a method of cultivation that enables the minerals in the soil to benefit the stems best. We do not turn the soil. The various grasses and wild herbs that appear provide a haven for useful insects. We have also chosen a few host plants to limit the presence of natural pests. A biological cultivation of the vines strengthens natural resistance and promotes a good circulation in the rhizosphere of the roots. The active organic processes in the soil reinforce the plant and render it less vulnerable to familiar diseases such as mildew. Sand&Berg have chosen a landscape layout for their garden in which the vineyard plays its part alongside the rowan, rose, mulberry, hazel and hornbeam in an ecological whole. At a time when everything is supposed to be bigger and bigger, more and more, we want an optimal wine that can receive all the attention it deserves in the vineyard and in the bottling.
Production method and aging:
When received in the cellar, they are destemmed, crushed and stored in steel tanks.
Fermentation takes place at temperatures ranging between 25 and 28°C. The must/wine macerates for a week and then is pressed. Only the wine obtained from the softest pressing will constitute our Dolcetto d’Alba. When the malolactic fermentation is finished, the wine is put into the older barriques, so that its strong varietal aroma is preserved and, at the same time, the short aging enhances its body and structure. Here it remains for two months and then returned to steel tanks until bottling.

EVENTS

  • Members of the Club will be informed via email and on their personal website page of any event planned by the San Maurizio Wine Club for its members.
