Description:
Barbaresco is one of the great red wines of Italy, and one of the best zones is the one surrounding the town of Neive. ‘Vigna Canova’ is the mention where Tenuta San Mauro harvest the precious Nebbiolo, at 350 metres above sea level. In this chalky soil we can find the famous blue marls of Langhe.
Tasting Notes and Pairing:
The wine is of an intense red ruby color. To the nose the bouquet presents notes of ripe red fruits, with hints of dried flowers, spices and herbs, followed by intense cocoa, truffle and hazelnut aromas. To the palate it’s structured, warm, very persistent thanks to the full body and fine, elegant tannins.

in the vineyard:
This winery applies the integrated control of pests in the vineyard. Harvest occurs in the second or third decade of October.
Production method and aging:
The fermentation occurs in stainless steel tanks at controlled temperature, in contact with skins for 20 days. The wine is then fined in large oak barrels for 24 months, before being bottled and undergoing another 24 months of fining.
