This wine comes from the need to counteract the climate change, to search the freshness and the pleasantness of drinking using a noble grape accustomed to warmer climates. The abundant water present in the subsoil, the southwest exposure and the minerality of the fossils in a clay / sandy soil complete the mineral and energetic profile of the wine.
Tasting Notes and Pairing: on the nose we find fresh notes of white flowers, white peach and a light almond note, the signature of this wine. The mouth is fresh and mineral, it is drunk with taste and without annoying alcohols, it persists on the palate with great pleasure.
Suggested serving temperature: 4-6 °, does not require the previous opening if drunk young. For older vintages, 10 minutes of oxygenation in the bottle is recommended
in the vineyard:
We approach the care of the vineyard in a sustainable and non-certified organic way, without the use of chemical herbicides. Great attention is given to the pruning and setting of the vine, in order to obtain the best results in quality, vegetative balance and age of the vines.
Production method and aging: The grapes are pressed as soon as they are harvested and the must is cooled instantly to obtain a sweet and delicate extraction of the skins in the following 12 hours of maceration. Temperature control throughout the whole fermentation cycle, aging for 6 months in steel with a continuous movement of the noble lees through bâtonnage, first every day slowing down to once a week.

ADDITIONAL SERVICES
Membership includes a Wine Concierge service that will be at disposal of the members upon appointment for online and in-person meetings at Relais San Maurizio and in the area. The Concierge service will advice on wines of the San Maurizio Wine Club and Italian wine in general.
San Maurizio Wine Club is available to organize winery visits for its members with the Guest Producers of the project.
Upon subscription, you will receive email and whatsapp contact to plan your Wine Concierge appointment and your visits.
EVENTS
Members of the Club will be informed via email and on their personal website page of any event planned by the San Maurizio Wine Club for its members.
Events may be free or with an access fee and they may allow to be accompanied by a partner.
